Badi-Aloo-Tomato Besara: A Tangy and Spicy Odia Curry

If you love tangy and spicy curries, you might want to try Badi-aloo-tomato beshara. Badi-Aloo-Tomato Besara (Odia: ବଡ଼ି-ଆଳୁ-ବିଲାତି ବେସର) is a traditional Odia curry that is made with sun-dried lentil nuggets, potatoes, and tomatoes cooked in a mustard paste. It is a hearty and satisfying dish that goes well with rice or roti.

Badi-Aloo-tomato besara is very easy to make at home. All you need are some badi (wadi), which are sun-dried lentil nuggets that can be made with urad dal. You can either make them at home or buy them from the market.

To make Badi-Aloo-tomato besara, you need to shallow fry the badi in oil until they are golden and crisp. Then you need to boil the potatoes and peel them. You also need to make a paste of mustard seeds, cumin seeds, garlic, and green chillies. Chop the tomatoes and onion finely.

To make the curry, heat some oil in a pan and add some asafoetida and cumin seeds. Then add the onion and saute it till golden. Then you need to add the tomato and cook till soft. After that, add the mustard paste, turmeric powder, coriander powder, red chilli powder, and salt as per your taste and cook till the oil separates. Then you need to add some water and bring it to a boil. Now, add the fried badi and potatoes and simmer till the gravy thickens. You need to garnish with some garam masala and coriander leaves.
