Letha (ଲେଥା) is a famous cuisine from the western part of Odisha, which is also known as Aambil (ଆମ୍ବିଲ୍) or Ambila (ଆମ୍ବିଳ).
It is mainly prepared by a specific community people known as kuilta (vaishya/khandayat).
This dish is filled with nutrients made up of Rice powder & lots of vegetables like yellow pumpkin, radish, Brinjal, Tomatoes, Coriander leaves, Red Chillies and tangi Kardi (fermented bamboo shoots) savored hot with Rice.
